Simple Recipes for the Quarantine and Beyond, pt 2
The 'stay home, stay healthy' order has put my meal creativity to the test. Not only do I want to continue eating in a way that supports my health and fitness goals, I want it to taste good, fit into my ever-changing budget AND be available either at the store or preferably, already in my pantry.
This snack is indulgent enough to pass for dessert, so if you're looking for a tasty treat, this one is a perfect choice. You'll notice I'm using berries again. That's because I had a large bag of frozen blueberries in my freezer and I'm not letting these bad boys go to waste. I'm using what I have in a variety of ways to keep my palate interested, my stomach full and my energy levels high without completely going off the rails (which I'll share in another blog).
Perfect Parfaits
(best served in a small bowl that makes it look extra fancy)
Put ingredients in your bowl in this order.
1/4 - 1/2 C Plain Greek Yogurt (choose whatever brand you like, dairy or non-dairy)
1/4 - 1/2 C Thawed or Fresh Blueberries (or fruit of your choice)
Sprinkle with unsalted chopped walnuts (or any nut that you have on hand). Not pictured.
Drizzle with honey (optional)
