The 'stay home, stay healthy' order has put my meal creativity to the test. Not only do I want to continue eating in a way that supports my health and fitness goals, I want it to taste good, fit into my ever-changing budget AND be available either at the store or preferably, already in my pantry.
Breakfast for me is usually a smoothie loaded with veggies and fruit. BUT...my schedule is different right now. So are breakfasts. This one is one of my favorite 'foods you have to chew' instead of drink. You'll notice I'm still using berries. That's because I had a large bag of frozen blueberries in my freezer and I'm not letting these bad boys go to waste. I'm using what I have in a variety of ways to keep my palate interested, my stomach full and my energy levels high without completely going off the rails (which I'll share in another blog).
Warm & Hearty Breakfast (single serving)
1/2 Cup Blueberries (use what you have) thawed or fresh
1/2 Cup Quick or Whole Oats (follow directions on carton or package), preferably not the flavored kind
1/8 C or a small handful of unsalted nuts (or any nut that you have on hand). This picture shows the last few nuts of the bag in our pantry. (I found them at our local Grocery Outlet for $2.99)
Sprinkle with Cinnamon or Nutmeg or whatever spice you enjoy.
